Chocolate-Marzipan Truffles for Valentine's Day


If you are still looking for a sweet surprise for your Valentine, how about some Chocolate-Marzipan Truffles? The marzipan-cream filling is quick and easy to make. You then fill it into dark chocolate truffle shells, which are available online or at specialty gourmet stores. After the filling is set you dip them into tempered chocolate. This step can be a bit tricky, but your sweetheart will definitely love them.

I hope I can hide mine from my husband for the next two days, without sneaking another one into my mouth. They are really good, especially for marzipan lovers. Have a sweet Valentine's Day!



Chocolate-Marzipan Truffles
makes about 20 truffles


50 g marzipan
20 g white chocolate
35 g heavy cream
1 tbsp. Amaretto

20 round dark chocolate truffle shells
100 g dark chocolate


Cut the marzipan into small cubes. Chop the chocolate into small shavings.

In a very small pot heat up the cream until boiling. Remove from the heat and add the Amaretto and marzipan cubes. Stir until the marzipan dissolved and you have a creamy mixture. Add the chocolate shavings and stir until it has melted and combined with the mixture.

Fill the marzipan cream into the chocolate truffle shells and put in a cool place for at least 12 hours to let the filling set.

For the coating you have to temper the chocolate first. You can read detailed instructions about tempering chocolate in my post about Milk Chocolate-Passion Fruit Truffles.

Dip each chocolate truffle into the tempered dark chocolate, and put it on a tray lined with parchment paper. Allow some time for the chocolate to set, and store at a cool place.
